We have classes in cake decorating and sugarcraft. Most courses are made up of 6 lessons each lasting two and a half hours, and they are held on Monday and Tuesday evenings and sometimes on Wednesdays. If we are running daytime classes, they are usually held on Mondays, Tuesdays and Wednesdays from 10 am to 12.30 pm. Class sizes are limited to either 4 or 5 students. Individual, one-to-one classes can be arranged. See NEWS page for up-to-date details of classes being run. Basic ClassesCake decorating. Six lessons leading to a fully decorated fruit cake to the students own design. Techniques include simple royal icing piping skills, preparation of a cake for coating with marzipan and sugarpaste, runout, crimping and embossing are also practised.Wired sugar flowers. Six lessons leading to a spray of flowers set in a pastillage trug on a pastillage plaque. Flowers include pulled flowers, blossoms, roses, carnations and rose leaves. Modelling for novelty cakes. Six lessons which include the preparation of sugar products for modelling and associated work, introduction to bas relief and full-figure modelling with sugarpaste. Intermediate/Advanced ClassesIntermediate and advanced cake decorating. Courses follow on from basic classes and include a wide range of techniques, eg runouts, bas relief, lace and filigree, cocoa and jelly painting, brush and tube embroidery, modelling etc.Intermediate and advanced sugar flowers. These courses often match the flowers which are in season. The aim will be to produce a finished display of the flowers and foliage concerned.
